Yeah, it seriously sucked. My pancakes were not beautiful like the ones at iHop or Waffle House or Cracker Barrel. I just couldn't make a beautiful pancake no matter how hard I tried.
Then I had this amazing idea to replicate my favorite breakfast muffin recipe (Sausage and cheese bites). I took a pound of breakfast sausage and scrambled it, then I took bisquick and mixed a cup and a half with 1 cup of milk and 2 eggs, and mixed in the pound of cooked sausage (promise me you won't use uncooked sausage, please). And in a few of them I put some blueberries in with the mix, because I was feeling a little dangerous and then popped them in the oven on 350 degrees until they were golden brown (probably about 20 minutes). When they came out I took a syringe and filled it with hot Maple Syrup and injected these sausage pancake muffins with syrup (can I just say yum?).
Then I took my experiment a little further with only using blueberries the bisquick pancake mix. I made them in the small muffin pan so they would come out bite size and then injected them with maple syrup as well. These could be your newest (and most certainly delicious) addiction. The BEST PART is these don't take much time and are super easy to heat up the next morning for breakfast. The sausage ones took 20 minutes to prepare where the plain blueberry pancake muffins only took 10 minutes. It's amazing how simple they are!
As always just for you,
M.
